Ingredients

  • 12 oz Whole wheat fettuccine
  • 2 tbsp Extra-virgin olive oil
  • 3 Garlic cloves, minced
  • 2 cups Cherry tomatoes, halved
  • 1 cup Low-sodium vegetable broth
  • 2 tbsp Tomato paste
  • 1 tsp Dried oregano
  • 1 tsp Dried basil
  • 0.25 tsp Red pepper flakes
  • 2 cups Fresh spinach, chopped
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Fresh basil, chopped
  • 0.25 cup Grated Parmesan cheese (optional)

Directions

Step 1

Bring a large pot of water to a boil. Add a pinch of salt and cook the whole wheat fettuccine according to the package instructions until al dente. Drain and set aside.

Step 2

In a large skillet, heat the extra-virgin olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant.

Add the halved cherry tomatoes to the skillet and cook for about 5 minutes, stirring occasionally, until the tomatoes start to soften.
