  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 1 tablespoon Red wine vinegar
  • 0.5 teaspoon Freshly ground black pepper
  • 2 tablespoons Fresh parsley, chopped (optional for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil and cook the whole wheat fettuccine according to package instructions until al dente, then drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the diced onion, grated carrot, and diced celery, cooking for 5-7 minutes until softened.
