Ingredients

  • 2 pounds Russet potatoes
  • 3 tablespoons Extra virgin olive oil
  • 0.5 cup Low-sodium vegetable broth
  • 2 cloves Garlic, minced
  • 2 tablespoons Nutritional yeast
  • 2 large Egg whites
  • 2 tablespoons Fresh chives, chopped
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Peel and cut the potatoes into evenly sized chunks. Place them in a large pot and cover with cold water. Bring to a boil over high heat, then reduce to a simmer and cook for 15-20 minutes, or until potatoes are very tender.

Drain the potatoes well and return them to the pot. Place the pot over low heat for 1-2 minutes, stirring occasionally, to evaporate any excess moisture from the potatoes.
