  • 8 pieces Corn tortillas
  • 1 large Red bell pepper

  • 1 cup Black beans, canned and drained
  • 1 medium Avocado
  • 1 large Lime
  • 0.5 cup Cilantro, fresh
  • 2 tablespoons Olive oil
  • 1 teaspoon Cumin powder
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Start by preparing the vegetables. Slice the red and green bell peppers, red onion, and zucchini into thin strips. Halve the cherry tomatoes.

Heat a large skillet over medium heat and add the olive oil.

Add the bell peppers, onion, and zucchini to the skillet. Sauté for about 5-7 minutes or until the vegetables are tender and slightly charred.
