Ingredients

  • 400 grams salmon fillets
  • 50 grams oats
  • 1 large egg
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons spring onion, finely chopped
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat your oven to 200°C (390°F).

Place the salmon fillets on a baking tray lined with parchment paper. Bake for 10 minutes until cooked through. Let them cool slightly.

While the salmon is cooling, grind oats in a food processor or blender until they become a coarse flour. Transfer to a large mixing bowl.
