Ingredients

  • 1 large English cucumber
  • 2 cups Cherry tomatoes
  • 0.5 medium Red onion
  • 0.25 cup Fresh parsley
  • 2 tablespoons Extra virgin olive oil
  • 2 tablespoons Lemon juice
  • 0.5 teaspoon Sea salt
  • 0.25 teaspoon Black pepper
  • 0.5 cup Feta cheese crumbles (optional)

Directions

Step 1

Start by washing the cucumber thoroughly. Slice it in half lengthwise and then into thin slices to create half-moons. Add to a large mixing bowl.

Step 2

Rinse and halve the cherry tomatoes. Add them to the bowl with the cucumber.

Step 3

Peel the red onion and slice very thinly. Add the slices to the bowl.

Step 4

Chop the fresh parsley finely and sprinkle it over the salad mixture.

Step 5

In a small bowl, whisk together the extra virgin olive oil, lemon juice, sea salt, and black pepper to create the dressing.

Step 6

Pour the dressing over the salad ingredients and toss everything gently to coat the vegetables evenly.

Step 7

If using feta cheese, sprinkle the crumbles over the top of the salad.

Step 8

Chill the salad in the refrigerator for at least 15 minutes before serving to allow the flavors to meld.

Step 9

Serve the cucumber tomato salad as a refreshing side dish to any meal or enjoy on its own as a healthy snack.
