Ingredients

  • 4 slices Whole-grain bread
  • 2 teaspoons Olive oil
  • 4 slices Lean turkey breast slices
  • 4 slices Low-fat Swiss cheese
  • 2 teaspoons Dijon mustard
  • 1 cup Low-fat milk
  • 1 tablespoon Cornstarch
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.125 teaspoon Nutmeg
  • 2 Eggs
  • 1 tablespoon White vinegar
  • 1 tablespoon Chopped parsley

Directions

Step 1

Preheat the oven to 350°F (175°C).

Step 2

Brush the slices of whole-grain bread with olive oil on one side only. Place them on a baking sheet, oil side down.

Step 3

On two slices of bread, spread 1 teaspoon of Dijon mustard each.

Step 4

Layer the bread with 2 slices of lean turkey breast and 2 slices of low-fat Swiss cheese. Top with the remaining slices of bread, oil side up.

Step 5

Bake in the preheated oven for 10 minutes, or until the cheese has melted and the bread is golden brown.

Step 6

Meanwhile, make the sauce: In a small saucepan, whisk together the low-fat milk and cornstarch over medium heat until the mixture begins to thicken, about 3-5 minutes.

Add salt, black pepper, and nutmeg to the sauce, and stir well. Keep the sauce warm over low heat while you poach the eggs.

To poach the eggs, bring a saucepan of water to a simmer and add 1 tablespoon of white vinegar. Create a gentle whirlpool with a spoon and crack an egg into the center of the whirlpool. Cook for about 3 minutes until the egg white is set, but the yolk is still soft. Remove with a slotted spoon and repeat with the second egg.
