Ingredients

  • 1 pound Pork tenderloin
  • 1 cup Whole wheat panko breadcrumbs
  • 1 teaspoon Sweet paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Salt
  • 2 large Egg whites
  • 4 pieces Whole wheat sandwich buns
  • 1 cup Baby spinach leaves
  • 1 large Tomato
  • 0.5 cup Low-fat plain Greek yogurt
  • 1 tablespoon Lemon juice
  • 1 tablespoon Dijon mustard

Directions

Step 1

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Trim any excess fat from the pork tenderloin and cut it into 4 equal portions. Pound each piece to about 1/2 inch thickness using a meat mallet.

Step 3

In a shallow dish, combine the whole wheat panko breadcrumbs, sweet paprika, garlic powder, onion powder, black pepper, and salt.

In another shallow dish, whisk the egg whites until frothy.
