Ingredients

  • 2 large roots (about 1.5 pounds) yucca (cassava) root
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon sea salt
  • 0.5 teaspoon freshly ground black pepper
  • 0.25 cup (chopped) fresh cilantro
  • 1 medium, cut into wedges lime

Directions

Step 1

Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.

Step 2

Peel the yucca roots by cutting off both ends, then making a cut along the length. Pry off the waxy peel with a knife or vegetable peeler.

Step 3

Cut the peeled yucca into 2-3 inch sections. Cut each section in half lengthwise and remove the fibrous core.

Place the yucca pieces in a large pot of water and bring to a boil. Cook for 10-15 minutes until the yucca is just tender but not falling apart.
