  • 0.5 cup Fresh parsley
  • 2 tablespoons Fresh lime juice
  • 1 tablespoon Olive oil
  • 1 teaspoon Honey
  • 0.25 teaspoon Salt

Directions

Step 1

Wash the cucumber and carrots thoroughly under cold running water.

Step 2

Using a mandoline or sharp knife, thinly slice the cucumber into rounds and place them in a large bowl.

Chop the fresh parsley finely and add it to the salad bowl.

Step 6

In a small bowl, whisk together the fresh lime juice, olive oil, honey, salt, and black pepper to create the dressing.

Step 7

Pour the dressing over the salad ingredients and toss lightly until everything is well combined and coated with the dressing.

Step 8

Adjust the seasoning to taste with additional salt and pepper if needed.

Step 9

Serve immediately, or allow the salad to chill in the refrigerator for 15 minutes to let the flavors meld before serving.
