Ingredients

  • 1 pound Whole wheat pizza dough
  • 4 cups Fresh spinach
  • 2 tablespoons Olive oil
  • 3 units Garlic cloves, minced
  • 1 cup Low-fat ricotta cheese
  • 1 cup Part-skim mozzarella cheese, grated
  • 0.25 cup Parmesan cheese, grated
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon Crushed red pepper flakes
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Cornmeal

Directions

Step 1

Preheat your oven to 450°F (232°C) and position the oven rack in the lower third.

Step 2

Roll out the whole wheat pizza dough on a lightly floured surface into a 14-inch circle or rectangle, depending on your baking sheet or pizza stone.

Step 3

Sprinkle a baking sheet or pizza stone with cornmeal to prevent sticking and transfer the dough onto it.

Step 4

In a large skillet over medium heat, add the olive oil. Once hot, add minced garlic and sauté for 1 minute until fragrant.

Step 5

Add the fresh spinach to the skillet and cook for about 2-3 minutes, or until wilted. Drain excess liquid and set aside to cool slightly.

Step 6

In a mixing bowl, combine the low-fat ricotta cheese, cooked spinach, Italian seasoning, crushed red pepper flakes, salt, and black pepper. Mix well until creamy and evenly combined.

Step 7

Spread the ricotta-spinach mixture evenly over the prepared pizza dough base, leaving a ½-inch border around the edge.

Step 8

Sprinkle the grated part-skim mozzarella cheese evenly over the top, followed by the grated Parmesan cheese.

Step 9

Place the pizza in the preheated oven and bake for 15-20 minutes, or until the cheese is bubbly and the crust is golden brown.

Step 10

Once baked, remove the pizza from the oven and let it cool for a few minutes before slicing.

Step 11

Cut the pizza into 8 slices and serve warm, enjoying your heart-healthy creamy spinach pizza!
