Ingredients

  • 1 cup Old-fashioned rolled oats
  • 2 cups Unsweetened almond milk
  • 1 cup Water
  • 0.25 cup Dried apricots
  • 0.25 cup Dried cranberries (unsweetened)
  • 0.25 cup Chopped walnuts
  • 1 tablespoon Ground flaxseed
  • 0.5 teaspoon Cinnamon
  • 0.5 teaspoon Vanilla extract
  • 1 pinch Pinch of salt
  • 0.5 cup Fresh blueberries (optional, for garnish)

Directions

Step 1

In a medium saucepan, combine the almond milk, water, and a pinch of salt. Bring the liquid to a gentle boil over medium heat.

Step 2

Once the liquid is simmering, stir in the rolled oats. Reduce the heat to low and cook, stirring occasionally, for about 10 minutes or until the oats are soft and have absorbed most of the liquid.

Step 3

Meanwhile, chop the dried apricots into small pieces if they are not already bite-sized.

Step 4

After the oats have cooked for about 10 minutes, stir in the chopped dried apricots, dried cranberries, cinnamon, ground flaxseed, and vanilla extract. Cook for another 5 minutes, stirring frequently, until the fruits are softened and heated through.

Step 5

Remove the oatmeal from the heat and let it sit for a minute to thicken. Stir in the chopped walnuts.

Step 6

Divide the creamy oatmeal into two bowls. If desired, top with fresh blueberries for added flavor and nutrition.

Step 7

Serve immediately for a warm and heart-healthy breakfast treat.
