Ingredients

  • 2 pounds Purple potatoes
  • 2 tablespoons Extra-virgin olive oil
  • 1 cup Unsweetened almond milk
  • 2 cloves Garlic, minced
  • 1 teaspoon Fresh thyme leaves
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Chives, chopped

Directions

Step 1

Peel the purple potatoes and cut them into uniform chunks, about 1 inch in size.

Step 2

Place the potato chunks in a large pot and cover them with cold water. Add a pinch of salt to the water.

Step 3

Bring the water to a boil over medium-high heat. Once boiling, reduce the heat to medium and let the potatoes cook until tender, about 15-20 minutes. You can test them by inserting a fork; the potatoes should feel very tender.

While the potatoes are boiling, in a small saucepan over medium heat, warm the olive oil gently and add the minced garlic. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.
