Ingredients

  • 4 large Yukon Gold potatoes
  • 4 slices Turkey bacon
  • 2 tablespoons Olive oil
  • 1 cup Low-sodium chicken broth
  • 0.5 cup Greek yogurt
  • 2 tablespoons Fresh chives
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Peel and cube the Yukon Gold potatoes into roughly 1-inch pieces for even cooking.

Step 2

Place the potatoes in a large pot and cover with water. Add a pinch of salt and bring to a boil over medium-high heat.

Step 3

Cook the potatoes until they are tender and can be easily pierced with a fork, about 15 minutes.

Step 4

While the potatoes are cooking, cook the turkey bacon: heat 1 tablespoon of olive oil in a skillet over medium heat, add the turkey bacon slices and cook until crispy, about 5-7 minutes. Remove the bacon from the skillet and crumble them into small pieces once cooled.

Step 5

Drain the potatoes and return them to the pot. Allow the residual heat to evaporate excess moisture.

Step 6

Add the remaining 1 tablespoon of olive oil, low-sodium chicken broth, and Greek yogurt to the potatoes.

Step 7

Mash the potatoes using a potato masher or fork until smooth and creamy. Adjust the consistency by adding more broth if needed.

Step 8

Season with salt and black pepper. Stir in the crumbled turkey bacon and finely chopped fresh chives.

Step 9

Serve the mashed potatoes warm with an extra sprinkle of chives on top.
