Ingredients

  • 4 large Yukon Gold potatoes
  • 2 tablespoons Olive oil
  • 4 cloves Garlic
  • 1 cup Low-sodium vegetable broth
  • 1 cup Unsweetened almond milk
  • 1 tablespoon Cornstarch
  • 2 teaspoons Fresh thyme
  • 2 teaspoons Fresh rosemary
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh parsley

Directions

Step 1

Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).

Step 2

Wash and peel the Yukon Gold potatoes, then slice them into 1/4-inch thick rounds.

Step 3

In a small bowl, mix the cornstarch with 2 tablespoons of the almond milk to create a slurry. Set aside.

Step 4

In a large oven-safe skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

Step 5

Add the vegetable broth to the skillet and bring it to a simmer. Stir in the remaining almond milk and the cornstarch slurry. Continue stirring until the sauce thickens slightly.

Step 6

Add in the sliced potatoes, fresh thyme, fresh rosemary, salt, and black pepper. Stir well to coat the potatoes evenly with the sauce.

Step 7

Cover the skillet with aluminum foil and place it in the preheated oven. Bake for 20 minutes.

Step 8

After 20 minutes, remove the foil and bake for an additional 10 minutes, or until the potatoes are tender and the top is slightly golden.

Step 9

Remove from the oven, sprinkle with fresh parsley, and let it cool for a few minutes before serving.
