Ingredients

  • 12 ounces Whole grain spaghetti
  • 2 tablespoons Olive oil

  • 8 ounces Shrimp, peeled and deveined
  • 8 ounces Scallops
  • 1 cup Low-sodium chicken broth
  • 1 cup Low-fat Greek yogurt
  • 0.5 cup Parmesan cheese, grated
  • 2 tablespoons Lemon juice
  • 0.25 cup Fresh parsley, chopped
  • 0.5 teaspoon Red pepper flakes
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Bring a large pot of water to a boil over high heat. Add a pinch of salt and cook the whole grain spaghetti according to the package instructions until al dente. Drain and set aside.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn the garlic.
