Ingredients

  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 2 garlic cloves, minced
  • 2 celery stalks, chopped
  • 1 large carrot, chopped
  • 4 cups frozen corn kernels
  • 4 cups low-sodium vegetable broth
  • 2 cups unsweetened almond milk
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon salt
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the chopped onion and cook for about 5 minutes, until it becomes translucent.

Step 3

Stir in the minced garlic, chopped celery, and chopped carrot, and sauté for an additional 5 minutes.

Step 4

Add the frozen corn kernels to the pot and stir to combine.

Step 5

Pour in the low-sodium vegetable broth and almond milk. Stir well.

Step 6

Add the bay leaf, dried thyme, ground black pepper, and salt to the pot.

Step 7

Bring the mixture to a gentle boil, then reduce the heat to low and let it simmer for about 15 minutes, stirring occasionally.
