  • 4 cups Low-sodium vegetable broth
  • 1 teaspoon Thyme leaves, fresh
  • 1 piece Bay leaf
  • 2 medium Potatoes, peeled and diced
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 cup Non-fat plain Greek yogurt
  • 2 tablespoons Fresh chives, chopped

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the chopped onion, celery, and garlic. Cook for about 5 minutes until softened.

Stir in the red bell pepper and cook for another 2 minutes.

Add the corn kernels, vegetable broth, thyme, and bay leaf to the pot.
