  • 1 leaf Bay leaf
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 teaspoon Ground cumin
  • 1 cup Unsweetened almond milk
  • 2 tablespoons Fresh parsley or cilantro, chopped (for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

Step 2

Add the minced garlic and cook for an additional 1 minute until fragrant.

Stir in the fresh corn kernels, diced potato, and cumin. Cook for 2-3 minutes, allowing the flavors to meld.
