Preheat the oven to 400°F (200°C).
Unroll the whole wheat puff pastry sheets on a lightly floured surface. Using a round cookie cutter (about 3 inches in diameter), cut out circles from the pastry. For half of the circles, use a smaller cutter to cut out the centers, creating rings.
Place the full circles on a baking sheet lined with parchment paper. Brush the edges with a little water, then place a ring on top of each, pressing lightly to adhere.
Bake the pastry shells in the preheated oven for 12-15 minutes or until golden and puffed. Remove from the oven and let them cool on a wire rack.
In a large skillet, heat the olive oil over medium heat. Add the chopped onion, carrot, celery, and garlic, and sauté for about 5 minutes until softened.

Stir in the low-fat Greek yogurt and chopped parsley, mixing well until the filling is creamy and well-combined. Remove from heat.
