  • 12 count Egg whites
  • 1 cup Fresh spinach
  • 1 medium Red bell pepper
  • 1 medium Zucchini
  • 1 tablespoon Olive oil
  • 0.5 cup Diced onion
  • 0.25 cup Low-fat feta cheese
  • 0.25 teaspoon Black pepper
  • 0.25 teaspoon Salt
  • 0.5 cup Cherry tomatoes
  • 2 tablespoons Fresh parsley

Directions

Step 1

Preheat your oven to 375°F (190°C).

In a large, non-stick oven-safe skillet, heat the olive oil over medium heat.

Add the diced onion, and sauté for about 3 minutes until softened.

Dice the red bell pepper and zucchini. Add them to the skillet and continue to cook for another 5 minutes, stirring occasionally.
