Ingredients

  • 4 medium yellow squash
  • 2 tablespoons olive oil
  • 1 medium, chopped onion
  • 0.5 cup whole-grain bread crumbs
  • 0.75 cup low-fat shredded cheddar cheese
  • 0.5 cup plain Greek yogurt
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon salt
  • 1 large egg
  • 2 tablespoons chopped fresh parsley

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Slice the yellow squash into 1/4 inch thick rounds.

Step 3

Heat 1 tablespoon of olive oil in a large skillet over medium heat.

Add the chopped onion to the skillet and sauté for 5 minutes until soft.

Add the sliced squash to the skillet, and cook for another 5 minutes, stirring occasionally, until just tender.
