  • 2 tablespoons, chopped fresh parsley
  • 1 teaspoon dried thyme
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Heat 1 tablespoon of olive oil in a large non-stick skillet over medium heat. Add the sliced onions and sauté until they become translucent and sweet, about 5 minutes.

Step 2

Add the thinly sliced potatoes to the skillet. Reduce the heat to low and cover with a lid. Cook the potatoes, stirring occasionally, until they are tender and cooked through, about 10-15 minutes.
