Ingredients

  • 2 cups whole wheat pastry flour
  • 2 tablespoons unsweetened cocoa powder

  • 0.5 teaspoon salt
  • 0.5 cup canola oil
  • 0.5 cup unsweetened applesauce
  • 0.75 cup plain Greek yogurt
  • 1 cup buttermilk
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon white vinegar
  • 1 large egg
  • 1.25 cups granulated sugar
  • 2 tablespoons red food coloring
  • 8 ounces neufchatel cream cheese, softened
  • 1 cup powdered sugar
  • 2 tablespoons skim milk
  • 0.5 cup chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Step 2

In a large bowl, sift together the whole wheat pastry flour, cocoa powder, baking soda, and salt; set aside.

Step 3

In another large mixing bowl, whisk together the canola oil, applesauce, and Greek yogurt until well combined.

Step 4

Add the buttermilk, vanilla extract, vinegar, egg, granulated sugar, and red food coloring to the oil mixture. Whisk until smooth and fully incorporated.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Be careful not to overmix.
