Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a large bowl, sift together the whole wheat pastry flour, cocoa powder, baking soda, and salt; set aside.
In another large mixing bowl, whisk together the canola oil, applesauce, and Greek yogurt until well combined.
Add the buttermilk, vanilla extract, vinegar, egg, granulated sugar, and red food coloring to the oil mixture. Whisk until smooth and fully incorporated.
Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Be careful not to overmix.
Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula.

While the cakes are baking, prepare the frosting by beating the neufchatel cream cheese with the powdered sugar and skim milk until smooth and creamy.
Once the cakes are done, remove them from the oven and let them cool in the pans for 10 minutes. Then, turn them out onto wire racks to cool completely.
Once cooled, spread a layer of the cream cheese frosting on top of one cake. Place the second cake on top and spread frosting over the top and sides.
