Ingredients

  • 1 pound lean ground turkey
  • 8 slices whole grain bread slices
  • 4 slices low-fat Swiss cheese
  • 2 tablespoons olive oil
  • 1 large onion, thinly sliced
  • 1 tablespoon low-sodium soy sauce
  • 0.5 teaspoon ground black pepper
  • 2 cups fresh baby spinach
  • 1 cup non-fat Greek yogurt
  • 2 tablespoons Dijon mustard
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon dried oregano
  • 1 teaspoon lemon juice
  • 1 bunch leafy green lettuce

Directions

Step 1

In a medium bowl, mix the lean ground turkey with the low-sodium soy sauce and ground black pepper. Form the mixture into four equally-sized patties.

Step 2

Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Add the thinly sliced onions and cook until caramelized, about 8-10 minutes. Remove from skillet and set aside.

Step 3

In the same skillet, add the remaining tablespoon of olive oil. Cook the turkey patties for about 5 minutes per side, or until they reach an internal temperature of 165°F (74°C).

Step 4

While the patties are cooking, make the dressing by mixing non-fat Greek yogurt, Dijon mustard, garlic powder, dried oregano, and lemon juice in a small bowl.

Step 5

Toast the whole grain bread slices until golden brown and slightly crisp.
