Ingredients

  • 1 head Romaine lettuce
  • 1 cup Cherry tomatoes
  • 1 medium Cucumber
  • 1 medium Red bell pepper
  • 0.25 medium Red onion
  • 1 large Carrot
  • 0.25 cup Olive oil
  • 2 tablespoons Balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Honey
  • 1 clove Garlic
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Rinse and dry the Romaine lettuce. Tear the leaves into bite-sized pieces and place in a large salad bowl.

Step 2

Rinse the cherry tomatoes and cut them in half. Add them to the salad bowl.

Step 3

Peel the cucumber, cut it in half lengthwise, slice into thin half-moons, and add to the salad bowl.

Rinse the red bell pepper, remove the seeds and core, cut into thin strips, and add to the salad.

Peel and thinly slice the red onion, then add a quarter of it to the salad bowl.
