Directions

Step 1

Prepare a large, heavy-bottomed pot with a tight-fitting lid. Begin by adding the olive oil and three or four popcorn kernels to the pot.

Cover the pot and place it on medium heat. Wait for the test kernels to pop. This indicates that the oil is hot enough.

Step 3

Once the test kernels have popped, remove them from the pot with a spoon and add the remaining popcorn kernels in an even layer. Immediately add the honey to the pot.

Carefully cover the pot, leaving the lid slightly ajar to let steam escape, and gently swirl the pot over the heat to ensure all kernels are coated with oil and honey.

As the popcorn begins to pop, continue to gently shake the pot over the burner. Listen carefully and once the popping slows to about 2 seconds between pops, remove the pot from heat.

Let the popped popcorn sit with the lid still on the pot for about 1-2 minutes to allow any final popping to finish.

Immediately sprinkle the salt (and cinnamon if using) over the popcorn, covering the pot and shaking it well to distribute evenly.
