Ingredients

  • 2 cups Whole wheat pastry flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Baking soda
  • 0.25 teaspoons Salt
  • 1 teaspoons Ground cinnamon
  • 1 cup Unsweetened almond milk
  • 0.5 cup Unsweetened applesauce
  • 2 tablespoons Canola oil
  • 3 tablespoons Honey
  • 1 teaspoon Vanilla extract
  • 1 large Egg
  • 0.5 cup Reduced-sugar fruit jelly
  • 1 tablespoon Confectioners' sugar (optional for dusting)

Directions

Step 1

Preheat the oven to 375°F (190°C). Lightly grease a standard muffin tin with canola oil or cooking spray.

Step 2

In a large mixing bowl, whisk together the whole wheat pastry flour, baking powder, baking soda, salt, and ground cinnamon until well combined.

Step 3

In a separate bowl, whisk together the almond milk, unsweetened applesauce, canola oil, honey, vanilla extract, and egg until smooth.

Step 4

Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Be careful not to over-mix as this can result in dense donuts.

Step 5

Spoon the batter into the prepared muffin tin, filling each cup about halfway full.

Step 6

Make a small indentation in the center of each donut using the back of a spoon, and carefully place about 1 teaspoon of reduced-sugar fruit jelly in each indentation.

Step 7

Cover the jelly with an additional scoop of batter, ensuring the jelly is fully enclosed.

Step 8

Bake in the preheated oven for 12-15 minutes or until the tops are firm and a toothpick inserted into the donut portion comes out clean.

Step 9

Remove the donuts from the oven and allow them to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Step 10

Once cooled, dust lightly with confectioners' sugar if desired before serving. Note that adding sugar will slightly increase the carbohydrates and calories.

Step 11

Serve and enjoy your homemade heart-healthy jelly donuts!
