Ingredients

  • 1 pound extra-lean ground beef (95% lean)
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano
  • 0.25 cup low-sodium beef broth
  • 2 tablespoons tomato paste
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 8 whole-wheat tortillas
  • 1 small head of romaine lettuce, shredded
  • 1 ripe avocado, sliced
  • 1 cup cherry tomatoes, quartered
  • 0.25 cup cilantro, chopped
  • 1 lime, cut into wedges

Directions

Step 1

Heat the olive oil in a large non-stick skillet over medium heat.

Step 2

Add the finely chopped onion and sauté for about 4-5 minutes until the onions are translucent.

Step 3

Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Step 4

Add the extra-lean ground beef to the skillet. Break it up with a spatula or wooden spoon as it cooks, for about 6-8 minutes or until no longer pink.

Step 5

Sprinkle the chili powder, cumin, and oregano over the beef and stir to coat.

Step 6

Add the low-sodium beef broth and tomato paste, stirring until the paste is fully incorporated. Simmer for 5 minutes to let the flavors meld together.

Step 7

Season with salt and black pepper. Adjust seasoning to taste if needed.

Step 8

Warm the whole-wheat tortillas according to package instructions.

Step 9

To assemble the tacos, fill each tortilla with a portion of the ground beef mixture. Top with shredded romaine lettuce, slices of avocado, cherry tomatoes, and a sprinkle of chopped cilantro.

Step 10

Serve with lime wedges on the side for an added burst of fresh flavor.
