Ingredients

  • 500 grams Boneless skinless chicken breast
  • 1 large Red bell pepper
  • 1 large Green bell pepper
  • 1 medium Red onion
  • 250 grams Cherry tomatoes
  • 1 medium Zucchini
  • 2 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 2 cloves Garlic
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Ground black pepper
  • 0.5 teaspoon Salt
  • 2 tablespoons Fresh parsley
  • 12 pieces Wooden skewers

Directions

Step 1

Soak the wooden skewers in water for at least 30 minutes to prevent burning during grilling.

Step 2

Cut the boneless skinless chicken breast into 1-inch cubes and set aside.

Step 3

Slice the red and green bell peppers into 1-inch squares. Likewise, slice the zucchini into thick rounds. Roughly chop the red onion into large pieces. Keep the cherry tomatoes whole.

In a large mixing bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, ground black pepper, and salt.

Add the chicken cubes to the marinade and toss well to coat. Let the chicken marinate for at least 15 minutes to absorb the flavors.
