  • 6 medium tomatoes

  • 3 tablespoons red wine vinegar
  • 2 cups low-sodium vegetable broth
  • 0.5 cup fresh parsley
  • 0 to taste freshly ground black pepper
  • 0 optional, to taste salt
  • 1 tablespoon lemon juice

Directions

Step 1

Start by preparing the vegetables. Peel the cucumbers, remove seeds, and chop them into chunks. Core the red bell peppers and chop into chunks. Core the tomatoes, remove seeds, and chop them as well. Finely chop the red onion.

Step 2

Peel and roughly chop the garlic cloves.
