Ingredients

  • 3 whole Egg whites
  • 1 whole Eggs
  • 1 teaspoon Olive oil
  • 0.5 cup Spinach, chopped
  • 0.25 cup Cherry tomatoes, halved
  • 2 tablespoons Low-fat feta cheese, crumbled
  • 0.5 teaspoon Fresh thyme leaves
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

In a bowl, whisk together the egg whites, whole egg, salt, and black pepper until frothy and well combined.

Step 2

Heat a non-stick skillet over medium-low heat and add the olive oil, swirling to coat the pan evenly.

Step 3

Pour the egg mixture into the skillet, tilting the pan to cover the bottom evenly. Let it cook undisturbed for about 1 minute.

Step 4

Sprinkle the chopped spinach, cherry tomatoes, feta cheese, and fresh thyme leaves over one half of the omelet.

Step 5

Using a spatula, gently lift the edges of the omelet, allowing the uncooked egg to flow underneath.

Step 6

Once the omelet is mostly set but still slightly runny on top, carefully fold the unfilled side over the filling.

Step 7

Continue cooking for another 1-2 minutes until the eggs are fully set and the filling is warmed through.

Step 8

Slide the omelet onto a plate and serve immediately for a delicious and heart-healthy breakfast.
