  • 2 loaves whole-grain baguettes
  • 2 cups baby arugula
  • 1 medium yellow onion
  • 1 tablespoon extra-virgin olive oil
  • 4 slices low-fat Swiss cheese

Directions

Step 1

Preheat the oven to 350°F (175°C).

Step 2

Slice the medium yellow onion thinly.

Step 3

In a large skillet, heat 1 tablespoon of extra-virgin olive oil over medium heat. Add the sliced onion and sauté until golden brown and caramelized, about 10 minutes. Remove from heat and set aside.
