Preheat the oven to 350°F (175°C).
Slice the medium yellow onion thinly.
In a large skillet, heat 1 tablespoon of extra-virgin olive oil over medium heat. Add the sliced onion and sauté until golden brown and caramelized, about 10 minutes. Remove from heat and set aside.
In a medium saucepan, combine 4 cups low-sodium beef broth, 2 tablespoons low-sodium Worcestershire sauce, 1 teaspoon garlic powder, 0.5 teaspoon black pepper, and 0.5 teaspoon dried thyme. Bring to a simmer over medium heat.

Assemble the sandwiches by layering each whole-grain baguette bottom with arugula, slices of beef, caramelized onions, and a slice of low-fat Swiss cheese. Top with the other half of the baguette.
