Ingredients

  • 120 grams Whole wheat flour
  • 60 grams All-purpose flour
  • 50 grams Unsalted butter, chilled and cubed
  • 60 milliliters Cold water
  • 0.5 teaspoons Salt
  • 2 Eggs
  • 2 Egg whites
  • 200 milliliters Almond milk, unsweetened
  • 1 teaspoons Vanilla extract
  • 2 tablespoons Honey
  • 0.25 teaspoons Ground nutmeg

Directions

Step 1

Start by preparing the crust: In a mixing bowl, combine whole wheat flour, all-purpose flour, and salt.

Step 2

Add the unsalted butter into the flour mixture and use your fingers or a pastry cutter to blend until the mixture resembles coarse crumbs.

Step 3

Slowly add the cold water, one tablespoon at a time, mixing until the dough comes together. Form the dough into a disc, wrap in plastic, and refrigerate for at least 15 minutes.

Step 4

Preheat your oven to 350°F (175°C).

Step 5

On a lightly floured surface, roll out the dough to about 1/4 inch thickness. Cut circles large enough to fit into the cups of a muffin pan.

Step 6

Gently press the cut dough into the muffin cups, trimming any excess off the edges.

Step 7

For the filling, whisk together the eggs, egg whites, almond milk, vanilla extract, honey, and nutmeg in a medium bowl until well combined.

Step 8

Carefully pour the filling into each prepared crust, filling about 3/4 full.

Step 9

Bake the tarts in the preheated oven for 20-25 minutes, or until the edges of the crust are golden and the filling is set.

Step 10

Allow the tarts to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Step 11

Serve warm or at room temperature. Enjoy these heart-healthy treats!
