Ingredients

  • 500 milliliters Low-fat milk
  • 3 large Egg yolks
  • 50 grams Honey
  • 20 grams Cornstarch
  • 1 teaspoon Vanilla extract
  • 1 pinch Salt
  • 0.5 teaspoon Ground cinnamon (optional)

Directions

Step 1

In a medium-sized saucepan, pour the low-fat milk and place over medium heat. Heat until small bubbles form around the edges, but avoid bringing it to a boil.

Step 2

Meanwhile, in a separate mixing bowl, whisk together the egg yolks and honey until light and well-combined.

Step 3

Add cornstarch to the egg mixture and continue whisking until smooth and free of lumps.

Step 4

Slowly and gradually, pour the hot milk into the egg mixture, whisking continuously to prevent the eggs from cooking prematurely.

Step 5

Once fully combined, pour the mixture back into the saucepan and return to medium heat.

Step 6

Stir the mixture constantly with a wooden spoon or spatula, scraping the bottom of the pan. Cook for about 8-10 minutes until the custard thickens enough to coat the back of the spoon.

Step 7

Once thickened, remove from heat and stir in the vanilla extract and a pinch of salt, and if desired, add ground cinnamon for extra flavor.

Step 8

Transfer the custard cream to a clean bowl and allow it to cool slightly before covering with plastic wrap. Ensure that the wrap touches the surface of the custard to prevent a skin from forming.

Step 9

Chill in the refrigerator for at least 2 hours before serving.

Step 10

Serve the heart-healthy custard cream chilled, with fresh fruit or as a filling for tarts or puff pastries.
