Ingredients

  • 2 cups Greek yogurt (low-fat)
  • 1 large Cucumber
  • 1 teaspoon Cumin seeds
  • 2 tablespoons Fresh coriander leaves
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 small Green chili (optional)
  • 1 tablespoon Mint leaves (optional)

Directions

Step 1

Peel the cucumber and finely grate it. If the cucumber is too watery, gently squeeze out the excess water using a clean cloth or by pressing it between your hands.

Step 2

In a dry pan over medium heat, toast the cumin seeds for about 1-2 minutes until they become fragrant. Allow them to cool slightly and then crush them using a mortar and pestle.

Step 3

In a mixing bowl, combine the low-fat Greek yogurt with the grated cucumber. Stir well to blend the cucumber evenly throughout the yogurt.

Step 4

Add the crushed cumin seeds, salt, and black pepper to the yogurt mixture. Stir until all the ingredients are evenly incorporated.

Step 5

Finely chop the fresh coriander leaves and add them to the mixture. If using mint leaves, finely chop and add them as well.

Step 6

If desired, finely chop the green chili and add it to the raitha for an extra kick. Ensure the spice level suits your preference.

Step 7

Mix all ingredients thoroughly. Taste and adjust the seasoning if necessary.

Step 8

Transfer the cucumber raitha to a serving bowl, cover, and chill in the refrigerator for about 10 minutes before serving. This helps meld the flavors together.

Step 9

Serve the heart-healthy cucumber raitha with your favorite dishes or enjoy it as a standalone refreshing snack.
