Ingredients

  • 100 grams Dark chocolate (70% cacao or higher)
  • 300 grams Silken tofu
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Honey
  • 1 tablespoon Unsweetened cocoa powder
  • 1 pinch Pinch of sea salt
  • 50 grams Berries for garnish (optional)
  • 5 leaves Mint leaves for garnish (optional)

Directions

Step 1

Begin by roughly chopping the dark chocolate into small, evenly-sized pieces to facilitate quick melting.

Step 2

In a heatproof bowl, gently melt the dark chocolate over a saucepan of simmering water, stirring occasionally to ensure it doesn’t burn. Once melted, remove from the heat and let it cool slightly.

Step 3

In a blender or food processor, combine the silken tofu, vanilla extract, honey, cocoa powder, and sea salt.

Step 4

Blend the mixture until it is completely smooth, scraping down the sides of the blender as needed to ensure an even consistency.

Step 5

With the blender on low, slowly pour in the slightly cooled melted chocolate, continuing to blend until the mixture is well combined and silky.

Step 6

Taste the mousse and adjust the sweetness by adding more honey if needed, then blend again briefly.

Step 7

Divide the mousse evenly among four small serving dishes or glasses.

Step 8

Cover each serving with plastic wrap and refrigerate for at least 1 hour to set and allow flavors to meld.

Step 9

Before serving, if desired, garnish with fresh berries and mint leaves for a pop of color and flavor.

Step 10

Enjoy this heart-healthy dessert with friends and family!
