Ingredients

  • 4 pieces (about 6 oz each) Boneless, skinless chicken breasts
  • 2 tablespoons Olive oil
  • 3 whole Garlic cloves, minced
  • 2 tablespoons Low-sodium soy sauce
  • 3 tablespoons Honey
  • 1 tablespoon Apple cider vinegar
  • 3 tablespoons Tomato paste (no salt added)
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Ground cumin
  • 0.5 teaspoon Chili powder
  • 2 tablespoons Fresh lemon juice

Directions

Step 1

In a small bowl, whisk together the olive oil, garlic, low-sodium soy sauce, honey, apple cider vinegar, tomato paste, smoked paprika, black pepper, ground cumin, and chili powder to make the marinade.

Step 2

Place the chicken breasts in a large resealable bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is well-coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

Step 3

Preheat the grill to medium-high heat.

Step 4

Remove the chicken from the marinade, letting excess marinade drip off to prevent flare-ups. Discard the leftover marinade.

Step 5

Grill the chicken breasts for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Use a meat thermometer for accuracy.

Step 6

Once cooked, remove the chicken from the grill and let it rest for 5 minutes to allow the juices to redistribute.

Step 7

Squeeze fresh lemon juice over the chicken just before serving to add brightness and enhance the flavors.

Step 8

Serve the grilled chicken with your choice of heart-healthy sides, such as steamed vegetables or a green salad.
