  • 150 grams Sugar
  • 60 milliliters Water
  • 750 milliliters Skim milk
  • 1 teaspoon Vanilla extract
  • 5 Eggs
  • 2 Egg whites
  • 50 grams Honey
  • 1 tablespoon Cornstarch

Directions

Step 1

Preheat your oven to 325°F (160°C) and prepare a deep roasting pan for a water bath by placing a kitchen towel on the bottom.

Step 2

In a small saucepan, combine 150 grams of sugar with 60 milliliters of water. Heat on medium-low without stirring, allowing the sugar to dissolve fully and turn into a deep amber caramel, which should take about 8-10 minutes.

Step 3

Quickly pour the caramel into an 8-inch round cake pan or individual ramekins, tilting to evenly coat the bottom. Set aside to cool.

Step 4

In another saucepan, heat 750 milliliters of skim milk over medium heat until small bubbles begin to form around the edges. Do not let it boil.

Step 5

Remove the milk from the heat and stir in 1 teaspoon of vanilla extract. Allow to cool slightly while you prepare the egg mixture.

In a large mixing bowl, whisk together 5 whole eggs and 2 egg whites with 50 grams of honey and 1 tablespoon of cornstarch until smooth and frothy.

Gradually pour the warmed milk into the egg mixture, whisking continuously to prevent curdling. Ensure the mixture is well-combined and smooth.

Strain the custard mixture through a fine mesh sieve into the prepared caramel-coated mold(s) to remove any egg solids.

Place the mold(s) into the prepared roasting pan. Carefully pour warm water into the pan, ensuring the water level reaches halfway up the sides of the mold(s).

Bake in the preheated oven for about 50-60 minutes, or until the custard is set around the edges but still slightly wobbly in the center.

Remove the mold(s) from the water bath and allow the flan to cool completely at room temperature, then chill in the refrigerator for at least 4 hours or overnight.

Step 12

To serve, run a knife around the edges of the flan to loosen it. Place a serving plate on top of the mold and invert. The caramel will cascade over the flan, creating a delicious sauce.
