Ingredients

  • 8 ounces whole grain pasta
  • 2 tablespoons extra virgin olive oil

  • 1 large garlic clove
  • 2 cups baby spinach
  • 1 teaspoon lemon zest
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 0.5 cup fresh basil (optional)

Directions

Step 1

Bring a large pot of water to a boil. Add a pinch of salt and cook the whole grain pasta according to the package instructions until al dente. Reserve 1/2 cup of the pasta cooking water, then drain the pasta.

Step 2

While the pasta cooks, heat the extra virgin olive oil in a large skillet over medium heat.

Finely mince the garlic clove and add it to the skillet. Sauté for about 1 minute until fragrant but not browned.
