  • 2 lb lean beef brisket
  • 1 tbsp olive oil

  • 4 whole grain sandwich rolls
  • 0.5 cup low-fat plain Greek yogurt
  • 1 tbsp dijon mustard
  • 2 cups fresh spinach leaves

Directions

Step 1

Preheat your oven to 300°F (150°C).

Step 2

Slice the onion into thin half-moons and mince the garlic cloves.

Step 3

In a large ovenproof pot or Dutch oven, heat the olive oil over medium-high heat.

Brown the brisket on all sides, about 3-4 minutes per side, then remove it from the pot and set aside.
