Ingredients

  • 12 oz Whole wheat pasta
  • 2 cups Fresh basil leaves
  • 2 cloves Garlic
  • 2 tbsp Pine nuts, toasted
  • 1 oz Grated Parmesan cheese
  • 3 tbsp Extra-virgin olive oil
  • 1 tbsp Lemon juice
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 1 cup Spinach leaves, fresh

Directions

Step 1

Bring a large pot of salted water to a boil and cook the whole wheat pasta according to package instructions. Reserve 1/4 cup of pasta water, then drain the pasta and set aside.

Step 2

While the pasta cooks, toast the pine nuts in a small, dry skillet over medium-low heat until golden brown, about 3-5 minutes. Stir frequently to prevent burning. Remove from heat and let them cool slightly.

Step 3

In a food processor or blender, combine the basil leaves, garlic cloves, toasted pine nuts, and spinach leaves. Pulse until the mixture is finely chopped.

Step 4

Add the grated Parmesan cheese, lemon juice, salt, and pepper to the mixture. With the processor running, gradually add the olive oil and blend until smooth and creamy. Adjust seasoning to taste.
