Ingredients

  • 2 slices whole-grain bread
  • 2 slices turkey bacon
  • 0.5 whole avocado
  • 1 small tomato
  • 0.5 cup mixed greens
  • 1 teaspoon extra virgin olive oil
  • 0.5 teaspoon lemon juice
  • 1 pinch black pepper

Directions

Step 1

Preheat a skillet over medium heat.

Step 2

Place the turkey bacon slices in the skillet and cook for 3-4 minutes on each side until crispy.

While the bacon is cooking, mash the avocado half in a small bowl with a fork. Add the lemon juice and a pinch of black pepper to the avocado, mixing well.

Slice the small tomato into thin slices.
