Ingredients

  • 1 piece Whole grain English muffin
  • 2 slices Turkey bacon
  • 3 large Egg whites
  • 0.25 cup Spinach
  • 2 slices Tomato
  • 0.25 medium Avocado
  • 1 teaspoon Olive oil
  • 0.125 teaspoon Salt
  • 0.125 teaspoon Black pepper
  • 1 slice Low-fat cheese

Directions

Step 1

Preheat a non-stick skillet over medium heat.

Step 2

Cook the turkey bacon in the skillet until crispy, about 5 minutes, turning occasionally. Once cooked, place it on a paper towel-lined plate to drain any excess fat.

Step 3

While the bacon is cooking, slice the whole grain English muffin and lightly toast it.

Step 4

In a small bowl, whisk together the egg whites with a pinch of salt and pepper.

Step 5

In the same skillet used for the bacon, add the olive oil and swirl to coat. Pour in the egg whites and add the spinach. Cook, stirring gently, until the eggs are set but still soft, about 3-4 minutes.

Step 6

Mash the avocado in a bowl and spread on one half of the toasted English muffin.

Step 7

Layer the cooked egg whites with spinach on the muffin, followed by the turkey bacon slices.

Step 8

Top the bacon with the slice of low-fat cheese and the tomato slices.

Step 9

Finish by placing the other half of the English muffin on top and gently press down.

Step 10

Serve immediately, enjoying a hearty and healthy start to your day!
