Ingredients

  • 8 ounces Whole wheat fettuccine
  • 2 tablespoons Olive oil
  • 2 cloves Garlic, finely minced
  • 1 cup Unsalted vegetable broth
  • 1 cup Low-fat milk
  • 4 ounces Neufchâtel cheese, softened
  • 0.5 cup Parmesan cheese, freshly grated
  • 0.5 teaspoon Black pepper, freshly ground
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Bring a large pot of water to a boil. Add the whole wheat fettuccine and cook according to package instructions until al dente. Drain the pasta, reserving 1/2 cup of the pasta water, and set aside.

Step 2

In a large skillet over medium heat, add the olive oil. Once the oil is hot, add the minced garlic and sauté for about 1 minute, until fragrant.

Step 3

Pour the unsalted vegetable broth into the skillet, bring it to a simmer, and let it reduce by half, about 5 minutes.

Step 4

Stir in the low-fat milk and Neufchâtel cheese, whisking continually until the cheese is fully melted and the sauce is smooth, about 3-4 minutes.

Step 5

Stir in the freshly grated Parmesan cheese and black pepper, and continue to mix until the Parmesan is melted and the sauce is creamy and thickened.

Step 6

Add the cooked fettuccine to the skillet, tossing to coat the pasta with the sauce. If the sauce is too thick, add a bit of the reserved pasta water a tablespoon at a time to reach desired consistency.
