Ingredients

  • 200 grams Plant-based chorizo
  • 4 pieces Whole wheat tortilla wraps
  • 1 tablespoon Olive oil
  • 1 medium Red bell pepper, diced
  • 1 medium Yellow onion, diced
  • 2 cloves Garlic, minced
  • 100 grams Baby spinach
  • 1 cup Brown rice, cooked
  • 1 cup Black beans, drained and rinsed
  • 1 medium Avocado, sliced
  • 1 medium Lime, cut into wedges
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin powder
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Step 2

Add the diced onion and red bell pepper to the skillet. Sauté for about 5 minutes, or until the onion becomes translucent.

Step 3

Stir in the minced garlic and cook for an additional 1 minute, until fragrant.

Step 4

Add the plant-based chorizo to the vegetables, breaking it up with a spatula. Cook for 5-7 minutes, stirring occasionally, until the chorizo is browned and heated through.
