  • 6 ounces Lean turkey chorizo
  • 6 large Egg whites
  • 0.5 medium, diced Red onion
  • 2 cups Spinach
  • 1 cup, quartered Cherry tomatoes
  • 4 small Whole grain tortillas
  • 1 medium, sliced Avocado
  • 1 medium, cut into wedges Lime
  • 0.25 cup, chopped Fresh cilantro
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Heat 1 teaspoon of olive oil in a non-stick skillet over medium heat. Add the diced red onion and cook until it becomes translucent, about 3 minutes.

Step 2

Add the lean turkey chorizo to the skillet and cook for about 5 minutes, breaking it up with a spatula, until it is fully cooked and slightly crispy.

Meanwhile, in a separate bowl, whisk the egg whites with a pinch of salt and black pepper.
