Ingredients

  • 4 rolls whole wheat sub rolls
  • 500 grams lean ground turkey
  • 2 tablespoons extra virgin olive oil
  • 1 medium red bell pepper, chopped
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 100 grams reduced-fat cheddar cheese, shredded
  • 4 tablespoons low-sodium ketchup
  • 2 tablespoons Dijon mustard
  • 1 cup romaine lettuce, shredded
  • 2 medium tomato, sliced
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon salt

Directions

Step 1

Preheat a large non-stick skillet over medium heat and add 1 tablespoon of extra virgin olive oil.

Step 2

Add the chopped onion and bell pepper to the skillet, and sauté for 5 minutes until they are soft and beginning to caramelize.

Step 3

Add minced garlic to the skillet and cook for another minute until fragrant.

Step 4

Add the ground turkey to the skillet, breaking it up with a spatula. Cook for 6-8 minutes until all the meat is browned and cooked through.

Season the cooked turkey with salt and black pepper. Reduce the heat to low.

Sprinkle the shredded reduced-fat cheddar cheese over the cooked turkey in the skillet. Cover for 2 minutes or until the cheese is melted.
