  • 4 cups Low-sodium chicken broth
  • 15 ounces Canned black beans, rinsed and drained
  • 1 cup Frozen corn kernels
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 medium Avocado, diced
  • 0.25 cup Cilantro, chopped
  • 1 cup Whole-grain tortilla strips
  • 1 for garnish Lime wedges

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Add the chicken breasts and cook until browned on both sides, about 5 minutes per side. Remove and set aside.
