Ingredients

  • 500 grams chicken breast, boneless and skinless
  • 4 cups low-sodium chicken broth
  • 50 grams ginger, peeled and sliced into thin strips
  • 3 cloves garlic, minced
  • 1 medium onion, sliced
  • 250 grams green papaya, peeled and cut into wedges
  • 100 grams water spinach (kangkong) or baby spinach
  • 2 tablespoons fish sauce, reduced sodium
  • 0.5 teaspoons black pepper, freshly ground
  • 1 tablespoon canola oil

Directions

Step 1

Cut the chicken breast into bite-sized pieces and set aside.

Step 2

In a large pot, heat canola oil over medium heat. Add the sliced ginger and minced garlic. Sauté until they become fragrant, about 2 minutes.

Add the sliced onion to the pot and cook until translucent, about another 2 minutes.

Add the chicken pieces to the pot. Cook and stir until the chicken is slightly browned on the outside, approximately 5 minutes.
